Chocolate Zucchini Cake

Beat well:
1/2 cup margarine
1/2 cup oil
1 3/4 cup sugar
2 eggs

Stir in:
1 t. vanilla
1/2 cup sour cream
2 1/2 cup flour
4 T cocoa
1 T baking soda
1/2 t. baking powder
1/2 t. cinnamon
1/2 t. salt
2 cup grated zucchini

Pour in 9 x 13 pan or two 9 x 9 pans

Mix separately and spoon over top
1/2 cup chopped nuts
1/4 cup brown sugar
1 cup chocolate chips

Bake at 350 degrees for 35-40 minutes

Cowboy Caviar

We had this at a party a few nights ago. It was sooo good. Kind of hearty and I don't usually like avocado, but this was good.


Cowboy Caviar

2 T red wine vinegar
1 ½ tsp. hot pepper sauce
2 tsp. olive oil
1 clove garlic, minced
Ground black pepper to taste
1 firm, ripe avocado
1 (15 oz) can each of black & pinto beans, drained & rinsed
1 small (11 oz) can corn kernels, drained
2/3 cup sliced green onion
2/3 cup chopped fresh cilantro
½ lb. Roma tomatoes, coarsely chopped
Salt to taste
Tortilla chips for accompaniment

In large bowl mix vinegar, hot sauce, oil, garlic and pepper. Peel, pit and cut avocado into ½ inch cubes. Add to vinegar mixture and toss lightly.
Drain and rinse beans and corn. Add beans, corn, onion, cilantro, and tomatoes. Mix gently to coat. Add salt to taste. Refrigerate, well sealed.
Serve as an appetizer with tortilla chips or add 2 cups shredded lettuce and some shredded cheese to make a salad. Makes 12 appetizer portions or 6 salad portions.

Chocolate Dipped Peanut Butter Pretzel Bites

Chocolate Dipped Peanut Butter Pretzel Bites
makes about 45 sandwiches

1 cup of peanut butter (creamy works best)
2 Tbsp softened butter or margarine
1/2 cup powdered sugar (you may need more)
3/4 cup brown sugar (you may need more)
Pretzels (the waffle shaped ones)
1 bag good quality chocolate (I like milk)

Using a mixer, combine peanut butter and softened butter and beat until smooth. Add the sugars and stir to combine. At this point if the filling will roll easily into balls without sticking to your hands you’re ready to go. If not, add more sugar ( a little bit of each) until you reach a consistency that is easy to roll. Use a teaspoon measure to scoop the filling. Roll each portion into a small ball and set on a cookie sheet. I like to roll all the balls and then sandwich them between two whole pretzels. When all the balls are rolled and successfully sandwiched, stick the whole tray in the freezer for about half an hour.

Pour the chocolate chips into a microwave safe bowl and heat at 30-second intervals, stirring occasionally until completely melted. Remove the pretzel sandwiches from the freezer and quickly dip each half-way into the melted chocolate. When all are dipped, return the tray to the freezer to set up completely. Store the sandwiches in the refrigerator until serving time.

Blueberry Muffins

Makes 24 muffins
Cream well: 1 cube butter1 cup sugar
Add: 2 eggs, beat well and 1 cup sour cream.
Mix in another bowl, then add to wet ingredients:
2c. flour, 1tsp baking pwdr, 1/4 tsp. baking soda, 1/2 tsp salt.
Fold in 1 cup (or more) fresh blueberries (you can use frozen, but I like fresh better).
Bake at 375 for 20-25 minutes.
(I doubled this recipe for a family luncheon and used an entire carton of blueberries from costco, since I was doubling it) These are really good-- I made some in mini muffin tins for snacks for the kids too.

Beef Burgundy


Yield: 7 pints

Ingredients:
6 lbs stew meat, cleaned and cut into bit-sized pieces (smaller better than larger).
2 lg. onions, coarsely chopped
10 slices bacon, diced and cooked and drained
1 whole garlic bulb, peeled and thinly sliced (I used prepared chopped garlic)
3+ cups beef broth and 3 cups Burgundy wine (without the cork) You'll need enough to cover the meat and veggies
1/2 lb fresh mushrooms, sliced or 2 cans mushrooms stems and pieces
1 1/2 tsp salt, 1/2 tsp pepper, 1 tsp thyme

Brown the stew meat and set aside. Note: Do not brown beef in bacon grease. Each should be done separately and drained of as much grease as possible. Saute onions and garlic and add to beef. Cook/drain bacon and add to beef. Stir in remaining ingredients and simmer about an hour.

Pour into hot, clean jars, leaving 1" headspace. Remove air bubbles. Wipe rims and adjust two piece lids. Process at 11 lbs pressure, pints for 60 minutes and quarts for 75 minutes.

To serve: heat and thicken with cornstarch or a roux. Serve over rice or noodles, or combine with canned vegetables for a good stew.

Strawberry Pie Glaze

This recipe would work for putting a glaze on any kind of fresh fruit pie...Just substitute the jello flavor that fits.

Mix together 1 C. Sugar and 2 Tbsp cornstarch. Add 1 C. of water and cook until thickened and clear. Take off the heat and stir in 3 Tbsp strawberry jello. Let cool a little for several minutes - not enough to completely thicken but enough so you don't cook your fresh fruit. Pour the glaze mix over the strawberries and stir to coat. Dump into a 9" baked pie shell. Refrigerate til needed and serve with whipt cream. If I am making an extra large pie or like lots of glaze, I do 1 1/2 times the recipe.
